Banana Coconut Chia Seed Pudding

Breakfast is my favorite meal of the day. I don’t know why but it always has been! I’ve never understood people that don’t eat breakfast- but I understand not wanting to spend a long time preparing something when you’re in a rush to get to work. My latest recipe is the perfect make-ahead breakfast AND it is sooooooo yummy!! No excuse to not eat breakfast now!

Ingredients

Scale

1 ripe banana

5 tablespoons chia seeds

1 cup unsweetened plain coconut yogurt

1/2 cup coconut milk

1/2 teaspoon vanilla extract

1 tablespoon maple syrup

Toppings:

Sliced fresh banana

Toasted unsweetened coconut

Instructions

In a bowl mash the ripe banana until no large chunks remain

Add in the chia seeds, coconut yogurt, coconut milk, vanilla extract, and maple syrup. Stir to combine

Cover with plastic wrap and let it sit for 4 hours or overnight

In the morning add the pudding to a cup and top with sliced banana and toasted coconut. How easy is that!?
