Bistro Salad*

Ingredients

  • 2 tablespoon good olive oil
  • 2 tablespoons balsamic vinegar
  • 1 clove garlic minced finely
  • 1/4 cup sundried tomatoes in oil
  • 4 cups spring mix greens
  • 1/4 cup pine nuts
  • 1/2 small red onion, sliced in rings
  • 1/4 cup crumbled feta cheese
  • handful shredded parmesan cheese

Instructions

  1. In your super cute salad bowl, put the olive oil, balsamic, minced garlic, and sundried tomatoes. Mix it all together with your salad tongs and try and break up the sundried tomatoes a little! After you’ve mixed together the dressing add the spring mix, pine nuts,  onion slices, feta cheese, and parmesan cheese. If you want to wait to eat it later, put it in the refrigerator, if not toss and serve! Enjoy!!!
