Chocolate Banana Muffins

Who else has 5 overripe bananas in the kitchen pretty much at all times?! Make a delicious breakfast treat by using them in this recipe! You’ll be shocked at how easy and yummy these are.

  • 1 stick butter, room temperature
  • 1/2 cup brown sugar
  • 2 overripe bananas, chopped
  • 1/2 cup Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 ounces semi sweet baking chocolate melted
  • Chocolate chips

Instructions

  1. Preheat oven to 350 degrees F. Spray a muffin tin with cooking spray and set aside
  2. In a bowl with an electric mixer cream together the butter and sugar until smooth
  3. Add in the bananas, yogurt, egg, and vanilla extract. Mix until smooth
  4. Add in the whole wheat and all purpose flour, baking soda, baking powder, and salt. Mix until just combined
  5. Remove half of the batter into another bowl. To one of the bowls add in the melted chocolate (microwave on high 30 seconds, remove and stir, microwave another 15 seconds) and mix until completely combined
  6. Fill the muffin cups by alternating small scoops of each batter, about 2 small scoops of each, until all of the batter is gone
  7. With a toothpick gently swirl the batters together, sprinkle the top with chocolate chips, and put into the preheated oven
  8. Bake 20-25 minutes, or until a toothpick inserted comes out clean
  9. That’s it.. a delicious breakfast treat!
