Chocolate Peanut Butter Chip Cookies

Ingredients

2 sticks (1 cup) cold butter cut into cubes
1 cup brown sugar
1/2 cup sugar
2 eggs
1 teaspoon vanilla extract
1/2 cup good quality dark cocoa powder
1 cup cake flour
1 1/2 cups all purpose flour
1 teaspoon cornstarch
3/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups (1-10oz bag) peanut butter chips

Instructions

Preheat your oven to 410 degrees F
In a bowl cream together the cold cut up butter, brown sugar, and white sugar
To that add the eggs and vanilla extract, mixing well
To the wet ingredients add the cocoa powder, cake flour, all purpose flour, cornstarch, baking soda, and salt until just combined. Don’t over mix
Mix in the peanut butter chips
On a parchment paper lined sheet tray add big scoops of the dough, evenly spaced out. I like to use an ice cream scoop so they’re all the same size. Put extra dough into the fridge to chill
Lightly press on the top to smooth them out
Put into your preheated oven and bake for 10-12 minutes depending on the size of your cookie
Let them cool slightly before serving.
