Coconut Curry Chicken Skewers

It’s amazing what a flavorful marinade will do to plain chicken! Just a few ingredients make chicken skewers into something extra special. Perfect weeknight meal or appetizer!

Chicken

Wooden skewers (soaked in water for 30 minutes)
2 pounds chicken breast, sliced into strips
1 cup coconut milk
Juice from 1 lime
4 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon honey
1 teaspoon curry powder
1 teaspoon cumin
1/4 teaspoon turmeric
1/4 teaspoon red pepper flakes
salt
pepper

Dipping Sauce

5 tablespoons coconut milk
1 tablespoon soy sauce
1/2 teaspoon turmeric
1/2 teaspoon curry powder
2 teaspoons Sriracha
1 tablespoon honey
2 tablespoons chopped peanuts
1/4 cup chopped fresh cilantro

Instructions

In a ziplock bag add the coconut milk, lime juice, minced garlic, soy sauce, honey, curry powder, cumin, turmeric, red pepper flakes, salt, and pepper. Zip it up and shake it together to combine
Add in the sliced chicken and put into the refrigerator to marinate for at least two hours
After two hours preheat your oven or grill pan over medium high heat and while that’s heating up skewer the chicken strips with the wooden skewers
Once the grill is hot spray with non-stick cooking spray and add the chicken to the hot surface
While the chicken is cooking make the sauce by combining the coconut milk, soy sauce, turmeric, curry powder, Sriracha, honey, chopped peanuts, and fresh cilantro until combined
Let the chicken cook about 2-3 minutes on each side depending on the thickness of the chicken
Once cooked add to a plate with the sauce and top with extra chopped cilantro, peanuts, and lime wedges
