Flank Steak Tacos

Looking to step up your Taco Tuesday game?? Try this incredibly delicious recipe! It’s the perfect weeknight meal because you can let the meat marinate overnight so it will be ready in minutes when its time to cook. I have recommended my favorite toppings but you can always add whatever you’d like! Ariba!

Ingredients

Marinade

Juice from 2 large navel oranges
Juice from 2 limes
6 cloves garlic, chopped
2 small onions, sliced
1/4 cup red wine vinegar
1/4 cup oil
Fresh cilantro (only use the ends for the marinade.. keep the tops for the tacos)
1 tablespoon cumin
1 tablespoon chili powder
1 tablespoon coriander
1 teaspoon cayenne pepper
1 teaspoon salt
1 teaspoon pepper

Tacos

1 1/2 pounds flank steak
Tortillas
Sliced radish
Chopped fresh cilantro
Sliced red cabbage

Avocado crema

1 avocado
1/2 cup sour cream
Squeeze fresh lime

Instructions

The first thing you want to do is make the marinade. In a ziplock bag add the flank steak and all of the ingredients listed above. Close the top of the ziplock bag and massage the meat so that everything is mixed and incorporated. Put it into the refrigerator for a few hours or overnight
Preheat your grill or grill pan to high
Add the meat letting it cook for about 3-5 minutes depending on the thickness. Flip it over and cook another 3-5 minutes. That will come out to about medium. If you want it cooked a little more then add an extra minute or two on each side
Once cooked take it off the grill and let it sit for 10 minutes on your cutting board
In the mean time in a small bowl mash together the avocado, sour cream, and lime until smooth
After the meat has rested slice the flank steak across the grain
Now it’s taco time! I personally love corn tortillas and then topping it with the avocado crema, sliced red cabbage, sliced radish, and chopped fresh cilantro but you can switch up your toppings depending on what you like
