Frosted Eggnog Sugar Cookies

Looking for the perfect cookie to surprise Santa with this year? Try my easy and EXTREMELY delicious Eggnog cookie! It’s soft, not overly sweet, and melts in your mouth. You might want to double this recipe because trust me, they will go fast! Tis the season to be fat and happy!

Ingredients

1/2 cup butter, softened
1/2 cup Crisco vegetable shortening
2 cups sugar
2 teaspoons vanilla extract
3 eggs
3 cups all purpose flour
2 teaspoons baking power
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon ground nutmeg

Icing

1 cup (2 sticks) butter, softened
1/2 cup eggnog
1 teaspoon vanilla extract
1 teaspoon ground nutmeg
5 cups confectionery sugar

Instructions

Preheat your oven to 375 degrees F
In a bowl with an electric mixer cream together your butter, vegetable shortening, sugar, and vanilla extract
To that add the eggs and give it another mix to combine
To the wet ingredients add the dry ingredients: flour, baking power, salt, cinnamon, and nutmeg
Mix until just combined. You don’t want to over mix because you want to keep these cookies as light and fluffy as possible!
Drop by heaping spoonfuls onto a parchment lined sheet tray and put it into your preheated oven
Bake for 8-10 minutes
Once the cookies are out and cooling it’s time to make the frosting
In a bowl with an electric mixer cream the butter until smooth
Add the eggnog, vanilla extract, and nutmeg and mix together
Add in the confectionery sugar and mix until smooth
Liberally frost the cooled cookies, sprinkle the tops with a little ground nutmeg, and serve! That’s it. So easy and SO delicious. These cookies will become a tradition. Enjoy!
