Greek Style Chicken Pita

Do you ever struggle to think of something delicious and healthy to make for lunch? Same. I get so bored eating the same old salads. This week switch it up with my easy to make Greek style chicken pita! It’s packed with yummy flavor and you can make it in under 5 minutes. No excuse to eat nasty fast food for lunch anymore.

Ingredients

Scale

1 whole wheat pita, cut in half

Cooked sliced chicken (I love using leftover rotisserie)

Thinly sliced red onion

Sliced olives

Sliced pepperocinis

Cherry tomatoes

Crumbled feta

Sprouts

12 tablespoons Tzatziki sauce

Tzatziki:

1/2 cup plain full fat Greek yogurt

1/4 cup shredded cucumber

Juice from 1/2 a lemon

2 tablespoons chopped fresh dill

1 clove garlic, minced

salt

pepper

Instructions

The hardest part (which is not hard at all) is making the tzatziki! In a bowl add the Greek yogurt, grated cucumber, chopped fresh dill, lemon juice, minced garlic, salt, and pepper. Stir to combine

Take a pita half and to the middle add some tzatziki, sliced chicken, and then as much as the toppings (or you can omit/add some) as you’d like

That’s it! The easiest lunch that is packed with yummy flavor and healthy enough that you won’t feel guilty about it
