Guinness on St. Patrick’s Day is obviously a must. Every year I try and do something different with it, mostly because I can only drink one and feel full. This year I’m making a fun and super easy appetizer with it! Serve it hot and watch it disappear- blame it on the leprechauns.
1 tablespoon Irish butter
2 cloves garlic
3 tablespoons Dijon mustard
1/4 cup Guinness Draught
Pinch salt
1 teaspoon onion powder
1/4 teaspoon cayenne
Pepper
4 oz Irish cheddar cheese, shredded
4 oz Gruyere cheese, shredded
In a small pan over medium heat melt the butter
To the butter add in the garlic and cook until fragrant, about 30 seconds
Add in the Dijon, Guiness, salt, pepper, onion powder, and cayenne pepper. Whisk together to combine
Let it come to a simmer and add in the cheese
Whisk until the cheese has melted completely
Serve hot with pretzels, soda bread, or regular bread! Yum!
