Healthy Carrot Cake Breakfast Cookies

Cookies for breakfast?! Signed me up!! These tasty and HEALTHY breakfast cookies will get anyone out of bed in the morning. They’re the perfect way to get your kids to eat something healthy… they’ll never know!

Ingredients

2 1/2 cups rolled oats
3/4 cup all purpose flour
1/4 cup coconut sugar/ organic sugar/ steevia
1/4 teaspoon salt
1 teaspoon baking powder
1/4 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 tablespoon ground flax seed + 2 1/2 tablespoons water (flax egg)
1/4 cup maple syrup
1/2 cup + 1 tablespoon milk (or almond milk)
1 teaspoon vanilla extract
1 cup grated carrots

Instructions

Preheat your oven to 350 degrees F
In a small bowl mix together the ground flax seed and water. Let it sit for about 5 minutes
In a large bowl mix together the rolled oats, all purpose flour, coconut sugar, salt, baking powder, baking soda, cinnamon, nutmeg, and cloves until combined
To the dry ingredients add the flax egg, maple syrup, milk, vanilla extract, and grated carrot. Mix until combined completely. Don’t worry the mixture will seem runny
Line a sheet tray with parchment paper and using an ice cream scoop add a scoop of the mixture onto the tray. Lightly press down the top so they’re even
Add into the oven and bake for 15-17 minutes until cooked through
