Lemon, Butter & Caper Zucchini Noodles

This healthy dinner is SO flavorful you won’t even believe you’re eating zucchini instead of pasta. It has a tangy bite from the lemon and capers with a buttery, garlicky, flavorful sauce that will keep you totally satisfied. Who says healthy has to be boring?

Ingredients

3 large zucchinis, made into noodles using a spiralizer
2 tablespoons butter
1 tablespoon olive oil
3 small shallots, diced
3 cloves garlic, minced
salt
pepper
1/4 teaspoon red pepper flakes
1/2 cup sun dried tomatoes, chopped
Zest of a whole lemon
Juice of a whole lemon
1/4 cup capers, drained

Toppings

Chopped fresh parley
Pine nuts
Grated Parmesan

Instructions

In a large saute pan melt the butter and olive oil
Add the shallots, garlic, salt, pepper, and red pepper flakes and saute for about 2-3 minutes
Add the zucchini noodles to the pan, stirring to combine, and let it cook for 5 minutes
To the noodles add the chopped sun dried tomatoes, lemon zest, lemon juice, and capers. Stir to combine and cook another 2-3 minutes
Now it’s time to serve! I like to top the zucchini pasta with a lot of chopped fresh parley, pine nuts, and grated Parmesan for extra flavor and crunch
