Mango Cobbler

This DELICIOUS mango cobbler is the perfect way to use up all of those late-season mangos! It’s so easy to make and it will definitely be a Summer favorite. Top it off with some cold vanilla ice cream and you have one of the best desserts ever!

Ingredients

Filling

3 cups chopped mango
1/4 cup sugar
1/4 cup all purpose flour
1/4 teaspoon salt
2 tablespoons fresh squeezed lemon juice

Cobbler

1 cup flour
2 tablespoons sugar
1/4 teaspoon salt
4 tablespoons cold butter, cut into pieces
1/4 cup shredded coconut
1 egg
1/3 cup milk
Vanilla ice cream (optional)

Instructions

Preheat your oven to 400 degrees F
In a bowl mix together the fresh chopped mango with the sugar, flour, salt, and lemon juice
Mix to combine completely and add it to a 9 inch pie dish
In another bowl add the flour, sugar, salt, and cold butter
Using your fingers or a pastry cutter, mix it together breaking down the butter so there are no large chunks left
Add the shredded coconut, egg, and milk and stir to combine
Drop the dough in large clumps on the top of the mango mixture and put the cobbler into the oven
Let it bake for 25-30 minutes until slightly golden brown on the top and the mango mixture is bubbling
Serve while it’s hot and top it with cold ice cream for a perfect Summer dessert
