Maple & Herb Roasted Acorn Squash Rings

This quick and easy side dish takes only minutes to prepare and everyone will be blown away by how good it is! Not only is it delicious but it’s beautiful. My roasted acorn squash rings will be your go-to side dish recipes for Fall/Winter!

2 acorn squash
2 tablespoons Maple syrup
4 tablespoons melted butter
salt
pepper
1/4 teaspoon red pepper flakes
1 teaspoon fresh rosemary, chopped
1 teaspoon fresh sage, chopped
1 teaspoon fresh thyme, chopped
Pomegranate seeds

Instructions

The first thing you want to do is preheat your oven to 425 degrees F
Cut the acorn squash into rings (see video for help!) and remove the seeds from the middle
Put the squash rings on a parchment lined sheet tray
In a small bowl mix together the maple syrup, melted butter, salt, pepper, red pepper flakes, rosemary, sage, and thyme until combined
Brush one side of the squash with half of the liquid and reserve the rest
Put it into the preheated oven and bake for 10 minutes
After 10 minutes take them out and flip the squash over. Brush the remaining liquid on the other side and put them back into the oven to let them cook for another 10 minutes
Once cooked, sprinkle the top with pomegranate seeds, and serve
