Margarita Bars

Not only can you drink delicious margaritas but now you can EAT them too! This fun dessert will be a hit on Cinco de Mayo (or anytime of the year) and you won’t even believe how easy it is. Ariba!

Ingredients

Crust

1 1/2 cups graham cracker crumbs
1/4 cup sugar
7 tablespoons melted butter

Filling

4 eggs
2 cups sugar
1/3 cup fresh squeezed lime juice
Zest from 1 lime
1 tablespoon orange juice
1 tablespoon tequila
1/4 cup all purpose flour
Powdered sugar for dusting

Instructions

Preheat your oven to 350
Line an 11 x 7 or a 9 x 9 pan with foil and spray with non stick cooking spray
In a bowl mix together the graham cracker crumbs, sugar, and melted butter
Add the crumbs to the bottom of the pan and pat it down evenly and firmly. I like to use the back of a measuring cup to make sure it’s really packed down
Put the crust into the preheated oven and let it bake for 12 minutes
While the crust is cooking make the filling
Whisk together the eggs, sugar, lime juice, lime zest, orange juice, and tequila until smooth
Add in the flour and whisk until there are no lumps
Add the filling to the hot crust and put back into the oven
Let the margarita bars bake for 25-30 minutes
Let them cool completely before dusting the top with powdered sugar and cutting
