Mediterranean Style Orzo Salad

1 1/2 cup orzo, cooking according to package directions
1/2 cucumber, diced
1/2 green bell pepper, diced
1/4 red onion, diced small
1 cup cherry tomatoes, cut in half
3/4 cup chopped pitted olives
2 oz feta, cut in cubes
2 cloves garlic, minced
1 tablespoon fresh oregano, minced
1/4 red wine vinegar
2 teaspoon Dijon mustard
1/4 cup good quality olive oil
salt
pepper

Instructions

Cook your orzo according to package directions and strain well. Add into a bowl
To the orzo add in the diced cucumber, green bell pepper, red onion, cherry tomatoes, olives, and feta
In a small bowl add the minced garlic, oregano, red wine vinegar, dijon mustard, and a good amount of salt and pepper. Stir to combine. Slowly whisk in the olive oil to make the vinaigrette
Pour the vinegar over the pasta salad, and mix completely
You can serve right away or make it ahead of time! Enjoy!
