3 cups arugula
4 slices honeydew melon, peel cut off, cut in large pieces
2 oz prosciutto
Parmesan, cut with a vegetable peeler
1 lemon, juiced
1 teaspoon Dijon mustard
1/4 cup grapeseed oil
Add your arugula to a serving plate
To the top of the arugula, add the honeydew melon slices, prosciutto, and parmesan peels
In a small bowl add the lemon juice, Dijon mustard, salt, and pepper
Whisk together while slowly adding in the grapeseed oil
Pour over the top of the salad and serve immediately!
