Orange Iced Ginger Molasses Cookies

These soft and chewy ginger molasses cookies are topped with a simple (yet delicious) icing. Santa will definitely put you on the nice list after eating these. Merry Christmas!

Ingredients

Cookies:

1/2 cup (1 stick) butter, room temperature

2/3 cup sugar

3 tablespoons molasses

1 large egg

1 teaspoon vanilla extract

1 3/4 cup all purpose flour

3/4 teaspoon baking soda

1/2 teaspoon salt

1 1/2 teaspoons ground ginger

3/4 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground clove

Sugar (for rolling)

Icing:

1 cup powdered sugar

1/2 teaspoon vanilla extract

2 teaspoons 1/2 and 1/2

23 teaspoons fresh orange juice

2 teaspoons fresh orange zest

Instructions

Preheat your oven to 350 degrees F and line sheet trays with parchment paper

In a large bowl with an electric mixer cream together the butter and sugar until fluffy

Add in the molasses, egg,  and vanilla extract until combined

In another bowl combine all of the dry ingredients 

Add the dry ingredients to the wet and mix until combined

Put the dough into the refrigerator uncovered  to chill for 15 minutes

After 15 minutes take a 1.5 tablespoons worth of the dough, roll it into a ball, and roll it into the granulated sugar

Put the balls on a sheet tray and flatten slightly

Put the sheet tray into the preheated oven and bake 7-10 minutes until cooked through

Let the cookies cool slightly before transferring to a cooling rack 

Once the cookies have cooled completely its time to make the icing

In a bowl mix together the powdered sugar, vanilla, zest, and milk. Add the fresh orange juice one teaspoon at at time until you’ve reached a thin drip from your spoon consistency

Dip the tops of the cookies and shake off the excess. You just want to ice the tops of the cookies!
