Roasted Berry Crostini

This time of year beautiful berries are bountiful. Make this very different but extremely delicious appetizer to take advantage of all the fresh berries! Trust me… you’ll LOVE it.

Ingredients

1 pint strawberries, hulled and sliced
1 pint blackberries
1 pint blueberries
salt
pepper
1 tablespoon honey
1/4 cup balsamic vinegar
1 teaspoon fresh thyme leaves
Juice from 1/2 lemon
1 baguette, sliced
olive oil
4 oz goat cheese
Zest from 1/2 lemon
Juice from 1/2 lemon
2 cloves garlic, minced
salt
pepper
Chopped fresh basil

Instructions

Preheat your oven to 400 degrees F
In a baking pan add the strawberries, blackberries, blueberries, pinch of salt and pepper, honey, balsamic, lemon juice, and thyme leaves. Mix together until combined and put into the oven and let them bake for about 20 minutes
While the berries are baking add the sliced baguette to a sheet tray. Drizzle the tops with olive oil and a sprinkle of salt and pepper. Put in the same oven to let them toast up until golden brown
In another bowl mix together the goat cheese, lemon zest, lemon juice, garlic, salt, and pepper until combined and set aside
Now it’s time to assemble! Take a crostini and add a layer of goat cheese, top a spoonful of the roasted berry mixture, and sprinkle the top with fresh basil
That’s it… the most delicious appetizer ever! How easy is that?
