Asian Soba Noodle Salad

This delicious soba noodle salad is the perfect alternative to the traditional boring pasta salad at your cookout this Summer. It’s easy to make, delicious, and extremely impressive. Give it a try!

Salad

  • 1 package Soba noodles (12 oz) cooked, drained thoroughly, and cooled
  • 1 red bell pepper, finely sliced
  • 1 cup shredded red cabbage
  • 1/2 cup shredded carrots
  • 1 cup shredded cucumber
  • 1 large scallion, sliced thin
  • 3/4 cup fresh cilantro, chopped
  • 1/2 cup unsalted peanuts
  • 1/2 cup edamame

Peanut Sauce

  • 1/4 cup smooth peanut butter
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 2 tablespoons Sambal chili paste (more or less depending on how spicy you want it!)
  • 3 tablespoons soy sauce
  • 2 tablespoons fresh grated ginger

Toppings

  • Chopped fresh cilantro
  • Cooked edamame
  • Chopped peanuts
  • Sliced scallions

Instructions

  1. The first thing you want to do is cook your soba noodles according to the package directions. Once cooked make sure you thoroughly rinse them, drain them, and let them cool
  2. To the cooked and cooled noodles add the red pepper, red cabbage, cucumber, scallions, cilantro, peanuts, and edamame and set aside
  3. In a smaller bowl make the peanut sauce by combining the peanut butter, sesame oil, rice vinegar, Sambal chili pasta, soy sauce, and grated ginger until smooth
  4. Add the peanut sauce to the noodles and toss to combine
  5. Add the noodles to a serving bowl and top with as much chopped cilantro, edamame, peanuts, and scallions as you’d like
  6. Serve immediately or keep chilled until it’s time to serve! That’s it. An easy and very different recipe that is the perfect side dish recipe. Enjoy!
