Lemony White Wine Spaghetti with Burrata

Anyone else craving some SERIOUS comfort food in this dark and weird time. Most people are practicing self quarantine and I don’t know about you- but I get bored FAST. Why not spend a little time and make literally the best pasta ever. It’s so easy to make and it will soothe the soul. Don’t believe me? Eat this pasta and see if you still feel sad.

Ingredients

Scale

Olive oil

1 yellow onion, chopped

4 cloves garlic, minced

1 pint heirloom cherry tomatoes

1/2 cup white wine

1 28 oz can organic peeled tomatoes

Zest of 1 lemon

Salt

Pepper

1/2 teaspoon red pepper flakes

Spaghetti cooked according to package directions

Ball burrata

Fresh basil

1 pint heirloom cherry tomatoes

Instructions

In a pan add the olive oil and heat over medium high

Add in the onions with a pinch of salt and cook until translucent, about 2 minutes

Add in the minced garlic and cook until fragrant

Add in the cherry tomatoes and cook for about 2 minutes

Add in the white wine to deglaze and the canned tomatoes. Using your knife break the large tomatoes into smaller pieces

Add in the lemon zest and season with a little salt, pepper, and red pepper flakes

Turn the sauce down to medium and let it simmer for about 30 minutes

Cook the pasta according to package directions, drain, then add into the sauce

Twirl the pasta around in the sauce to coat it before adding it to your plate. Add chopped fresh basil and a half a ball of burrata per serving. Add a big crack of black pepper and a little more lemon zest and you have the BEST PASTA EVER. Seriously.
