Spiced Pear Collins

I LOVE a good pear cocktail, and this might be the best yet! Making this spiced simple syrup really elevates this cocktail to the next level. It’s the perfect festive holiday cocktail. Cheers!

Ingredients

Scale

Spiced Simple Syrup

1/2 cup sugar
1/2 cup water
1 tablespoon whole cloves
2 sprigs fresh rosemary

Cocktail

1/2 pear
1/4 lemon, sliced
1/2 sprig fresh rosemary
3 oz Gin
1 oz Spiced simple syrup
club soda
sprig rosemary for garnish

Instructions

In a small pan over medium high heat add the sugar, water, rosemary sprigs, and clove. Stir until all of the sugar is dissolved and the simple syrup has come to a slight simmer. Turn it off and let it steep until room temperature
In a shaker muddle together the pear, lemon slices, and rosemary until all of the juices have been released
To the mixture add the gin, the simple syrup, and ice and shake until chilled
Strain into a glass with with or without ice, top with club soda, and add a sprig of fresh rosemary for garnish
