Turkey, Caramelized Onion & Cranberry Sandwich

I don’t know about you, but after Thanksgiving I have WAYYY too much turkey leftover. Make this delicious sandwich so that no turkey goes to waste! This recipe is so easy and tasty that it will be your go-to post turkey day recipe!

2 small onions, sliced thin
olive oil
2 slices bread of choice
Mayo
4 sliced sharp white cheddar
2 tablespoons cranberry sauce
Leftover turkey
Handful fresh arugula

Instructions

The first thing you want to do for this delicious sandwich is caramelize your onions
In a sauté pan over medium high heat add the olive oil and the thinly sliced onions. Cook, stirring often, until a nice golden brown. It usually takes about 10-15 minutes
Now it’s time to assemble the sandwich
Spread mayo on one side of the sandwich and add the sliced white cheddar
Spread the cranberry sauce evenly, add the turkey, a generous portion of the caramelized onions, and top it with arugula
Add the other slice of bread to the top, cut in half, and serve!
