Ultimate Avocado Toast

Ever heard of the very popular breakfast recipe ‘avocado toast’? Well, I’ve taken that recipe and kicked it up like 1,000 times. This recipe is so easy/delicious/impressive it will become your go-to breakfast or brunch!

Ingredients

1 slice of good quality crusty bread
67 asparagus, end trimmed
olive oil
salt
pepper
1/4 teaspoon lemon zest
1 small Haas avocado
Juice of 1/2 lemon
1 small clove garlic, grated
1/8 teaspoon red pepper flakes
3 slices prosciutto
Parmesan
1 egg, fried

Instructions

Preheat your oven to 400 degrees F
The first thing you want to do is roast your asparagus! On a sheet tray add the trimmed asparagus and lightly drizzle with olive oil. Sprinkle with a little salt, pepper, and grate a little lemon zest over them. Let them roast in the oven for 10 minutes
About 5 minutes into cooking add a slice of bread to the oven to toast
While the asparagus are cooking smash a ripe avocado with your fork and to the avocado add salt, pepper, lemon juice, and red pepper flakes. Set aside
In a skillet over medium high heat add a little butter and fry an egg
Now it’s time to assemble everything!
Take your toasted bread and add the smashed avocado, then slices of proscuitto, then the roasted asparagus, a sprinkle of Parmesan, a squeeze of lemon juice, and then top it off with a fried egg
