Savory Leek, Asparagus & Tomato Quiche

This Spring inspired savory quiche is SO delicious you won’t even believe it. It’s the perfect breakfast, brunch, lunch, or even dinner. It’s easy to make (I use pre-made crust) and beautiful. Perfect way to start the day!

Ingredients

1 9 inch pie crust
1 cup sharp cheddar cheese, shredded
1/2 leek, washed and chopped
5 asparagus, ends cut off, chopped
1/4 cup fresh basil leaves, chopped
1 tablespoon fresh thyme leaves
4 oz goat cheese
1 pint cherry tomatoes, cut in half
6 eggs
1 1/4 cup whole milk
salt
pepper

Instructions

Preheat your oven to 375 degrees
Arrange the pie crust into a 9 inch pan, trimming the edges if needed
Add the grated cheddar cheese to the bottom, spreading it out evenly
Trim the green part of the leek off, the other end off, cut in half longways, and wash thoroughly. Slice one of the half of the leek thinly and sprinkle it over the cheese
Cut the asparagus and add it on top of the leeks
Add the chopped basil and thyme leaves
Crumble the goat cheese over the top
Using a serrated knife, cut the tomatoes in half and arrange them on the top
In a bowl mix together the eggs, milk, salt, and pepper until combined. Pour the mixture into the quiche and put it into the oven
Let it bake for about 45-55 minutes or until the center is set
Let it cool slightly before cutting and serving
