Watermelon Radish & Citrus Salad

Ever heard of a watermelon radish before? It’s one of my latest crops in the garden and I couldn’t be more excited about it. It’s crunchy, a little spicy, and full of flavor. This salad uses beautiful Winter citrus and crisp watermelon radishes to make the most flavorful salad ever! Have you ever heard of a watermelon radish?

Ingredients

Scale

1 watermelon radish, sliced thin

1 blood orange, segmented

1 small grapefruit, segemented

1 tablespoon chopped walnuts

1 oz goat cheese

2 teaspoons thinly sliced chives

Vinaigrette:

1/2 shallot, minced

1 tablespoon Champagne vinaigrette

Salt

Pepper

1/2 teaspoon Dijon mustard

1 tablespoon olive oil

Instructions

On a plate add the thinly sliced watermelon radish and segmented blood orange and grapefruit. If you don’t know how to segment a citrus watch the video!

To the radish and citrus and the chopped walnuts, goat cheese, and chives

In a small bowl add the minced shallot, champagne vinegar, dijon, salt, pepper, and olive oil. Stir until combined 

Spoon the vinaigrette over the top and serve! I promise you will be blown away with the flavor of this salad
