Ok, let me just tell you these things are INSANE. Like... crazy good. And not only are they crazy good but they're easy to make. If you want to cut down the time make the pear chutney ahead and the day you are wanting to serve them just assemble and bake. These are the perfect appetizer for the Holiday season.. or any season!

Ingredients
  1. 2 sheets frozen puff pastry, defrosted (you will only need about 1 1/2 sheets)
  2. olive oil
  3. 1 shallot, diced
  4. 2 pears, diced
  5. 2 tablespoons brown sugar
  6. 3 tablespoons apple cider vinegar
  7. 1/2 teaspoon fresh thyme leaves removed from the stems
  8. 1 cup walnuts, toasted and chopped fine
  9. Block of gruyere cheese, cut in small cubes
  10. 1 egg, scrambled
  11. salt
  12. pepper
Instructions
  1. The first thing you want to do is make the pear chutney which is so easy to do!
  2. In a pan heat up olive oil over medium-medium high heat
  3. Add the diced shallots and cook until translucent, about 2-3 minutes
  4. Once the shallots are cooked add the pears, brown sugar, apple cider vinegar, and fresh thyme. Stir it together and let it cook for about 10 minutes, stirring occasionally
  5. Let the chutney cool slightly
  6. Preheat the oven to 425 degrees F
  7. Roll the puff pastry out as thin as you can ( I like to roll it out on parchment! )
  8. Cut the puff pastry in squares
  9. On each square add a piece of cheese, a little scoop of pear chutney, and a sprinkle of walnuts
  10. Fold the puff pastry in half, making a triangle, and press the edges firmly
  11. Add the puffs on a parchment paper lined sheet tray, brush with egg wash, and sprinkle with salt pepper and fresh thyme
  12. Let them cook until golden brown about 15-17 minutes
  13. Take them out and devour while hot. BEWARE: these are addicting!!!

    Can these be baked and then held in a warm oven (for maybe 30 minutes) until guests arrive? Also, are they edible when cold?
