OK- this recipe is SO easy I almost didn’t share it. BUT it’s sooooo good. Fresh, late Summer tomatoes are the star in this recipe and I promise you this will blow you away.
I don’t know if you’ve noticed by I freaking LOVE Mexican street corn. It has so much flavor and I can’t get enough. I decided that since corn was looking so good why not make Mexican street corn- but in a soup form! The result- a creamy, delicious, zesty, heavenly soup that is perfect for Summer.
