Apple Pie No Churn Ice Cream
Apple pie is a MUST for me during Fall. I love the warm, delicious, nostalgic flavors of it. But, I’m an ice cream girl. It can be 20 degrees outside and I’d eat ice cream- so, I decided to make an apple pie ice cream to combine my favorite things! I don’t own an ice cream maker (who does, right?) so this recipe is a no churn one. Yay Fall!
Ingredients
3 large apples, peeled and diced
1 cup brown sugar
1/2 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
Juice from 1/2 lemon
1 sheet pre-made pie crust
Melted butter
1 tablespoon brown sugar
1/2 teaspoon cinnamon
1 tablespoon cornstarch + 1 tablespoon water
2 cups heavy whipping cream
1– 14 oz can sweetened condensed milk
Instructions
Preheat your oven to 400 degrees F
In a pot over medium high heat add in the diced apples, brown sugar, nutmeg, cinnamon, and lemon juice
Let it cook, stirring often, until the apples are cooked down and the juices have released- about 6-8 minutes
While the apples are cooking add the pie crust to a sheet tray. Brush the top with butter and sprinkle brown sugar and cinnamon over it. Put into the preheated oven to let it get slightly golden brown, about 15 minutes
Once the apples have cooked down slightly make a slurry by combining water and the cornstarch in a smaller bowl. Pour the slurry into the apples, stir to combine, and let them thicken up by cooking another 3-5 minutes
Once the apples are done and the crust is cooked let them both cool completely
In a large bowl with an electric mixer whip the heavy whipping cream until stiff peaks
Gently fold in the sweetened condensed milk with a spatula until combined
Now it’s time to assemble! In a loaf pan add 1/3 of the whipped cream mixture and spread evenly. To the top of that add a large scoop of the apple mixture and slightly swirl it around. Crumble the crust on the top
Repeat the last steps until you are filled to the top
Cover with plastic wrap and put into the freezer for 6 hours or overnight
When it’s time to serve let it sit out for about 5 minutes to let it soften slightly before scooping
