Cinnamon Streusel Coffee Cake
Is there anything more warming, comforting, and delicious as a cinnamon streusel coffee cake?! No- there’s not. This coffee cake is so good it might bring a tear to your eye no joke. It’s the perfect make ahead breakfast for a holiday, house guests, or any special occasion! It’s so delicious and not hard at all to make- my kind of breakfast.
Ingredients
Streusel:
2 1/2 cups all purpose flour
1/2 cup sugar
1 cup brown sugar
1 1/2 tablespoons cinnamon
1/4 teaspoon salt
1 cup (2 sticks) butter, melted
Cake:
2 1/4 cups all purpose flour
1 1/4 cup sugar
2 teaspoons baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
1 1/2 cups sour cream
4 eggs
1 1/2 sticks butter (melted)
1 1/2 teaspoons vanilla extract
Glaze:
2 cups powdered sugar
1/4 cup melted butter
1/4 cup cream
Instructions
Preheat your oven to 350 degrees F and butter or grease a 9 x 13 pan
The first thing you want to do is make the streusel. In a bowl combine the all purpose flour, sugar, brown sugar, cinnamon, and salt until combined. Add in the melted butter and mix together by hand until crumbles form. Set aside
In a large bowl combine the flour, sugar, baking powder, baking soda, and salt
In another bowl combine the sour cream, eggs, melted butter, and vanilla extract until combined
Pour the wet ingredients into the dry and mix until just combined
Pour 1/3 of the batter into the bottom of the prepared baking dish and then sprinkle the top with the cinnamon streusel. Repeat this step until you’ve used all of the batter and the streusel
Put into the preheated oven to bake for 50-60 minutes. Check with a cake tester at 50 minutes. If it comes out clean- it’s done!
Once cooked let it cool
Now it’s time to make the glaze! In a bowl add the powdered sugar, melted butter, and cream. Whisk so no powdered sugar chunks remain. Drizzle as much or as little of the glaze over the top. Don’t worry if you didn’t use it all!
Slice, serve, cry, and repeat. This is definitely best served warm!
