Baked Brie En Croute*

- 1 brie round, top rind cut off
- 1 sheet puff pastry, room temperature
- 1 tablespoon butter
- 1/2 onion, sliced
- 1/2 apple, sliced
- 1 tablespoon crasins
- 5 sprigs fresh thyme
- salt
- pepper
- 1 egg, scrambled for egg wash
- crackers to serve
Instructions
- Don’t you hate when people invite you over to their house and pull the “can you bring an appetizer” trick? I know I do. So, like everyone else, you bring over a bag of tostidos with a jar of
deliciousgross queso and call it a day. NO! This is no longer allowed. We’re going to bring this delectable and easy appetizer and knock the queso socks off of everyone. All you need to do is get everything ready and just bake it when you’re there. They won’t know what hit them. Ok, time to get cooking. In a saute pan over medium high heat add your butter. Once the butter has melted add the sliced onions and apples, craisins, fresh thyme leaves, salt, and pepper. Cook them, stirring often, until caramelized. This should take about 6-7 minutes. Once they are caramelized, take off the heat. Lay the puff pastry out flat and add the onions and apples in the middle. On top of that add the brie, rind side down. Start folding the four corners of the puff pasty over the top of the brie and then the remaining corners so it makes a little delicious package. Flip the folded up brie over so you have the pretty side face up and put in bakeware that looks good enough to serve it in. Brush the top and sides with and egg wash. Now, you can either put it in a preheated 375 degree oven now or bring it with you at this point to wherever you’re going and put it in the oven then. Let it cook in the oven until it is a beautiful golden brown, about 15 minutes. Serve with crackers and watch everyone go nuts. Beware, you might get asked to bring a dish more often and I apologize for that. Enjoy!
