Black Bean Burgers
During Summer burgers are on the grill regularly but every once in a while I get a craving for something different, more flavorful, and healthier. Switch up your normal burger routine with this easy to make and insanely delicious homemade black bean burger! You won’t miss the meat- trust me. Happy Summer!
Ingredients
Black Bean Burger:
2 – 14 oz cans plain black beans, rinsed and drained
1 tablespoon grapeseed oil
1/2 cup finely chopped red onion
2/3 cup diced red pepper
1 teaspoon cumin
2 cloves garlic, minced
1 egg
1/2 cup panko
1/2 cups chopped scallions
1/2 cup fresh chopped cilantro
Salt
Pepper
Onion & Garlic Powder
2 tablespoon Worcestershire Sauce
2 tablespoons ketchup
Sriracha Mayo:
1/2 cup Mayo
1 tablespoon Sriracha
Juice from 1/2 lime
Additional:
Buns, sliced tomato, red onion, avocado, lettuce (anything you’d like!)
Instructions
Preheat your oven to 350 degrees F
On a parchment lined sheet tray add the rinsed and dried black bean in a thin layer. Put the tray into the preheated oven and let them cook for 10 minutes to dry out the black beans slightly
After the black beans are done cooking add them into a bowl. Using a fork mash the black beans. I like to leave some of the black beans whole but you can make them as mashed as you’d like! You can even put them into a food processor
While the beans are cooking heat up a saute pan with the grapeseed oil. Add in the onion, red pepper, pinch of salt and pepper, and cumin. Let sautee for about a minute
Add in the garlic and cook until fragrant, about 30 seconds
Add the cooked veggies into the bowl with the black beans. To the bowl add in the egg, panko, chopped scallions, chopped cilantro, Worcestershire sauce, ketchup, salt, pepper, onion and garlic powder. Use your hands to combined very well
Form 4 equal patties out of the mixture and let them stand for about 5 minutes
Heat up a skillet over medium high heat with a little grapeseed oil. Once hot add the patties and let them cook for 3-5 minutes on each side until a beautiful golden brown
While the burgers are cooking combine the mayo, Sriracha, and lime juice
After the burgers are cooked assemble as you’d like and devour! YUM!
