Blueberry Pie Overnight Oats
All of the delicious flavors of a blueberry pie in a healthy breakfast option?! Now thats something to get out of bed for.
Ingredients

- 1/3 cup rolled oats
- 1/3 cup milk (or any nut milk you’d like)
- 1/3 cup plain Greek yogurt
- 1 teaspoon maple syrup
- 1/4 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- Walnuts for topping
Blueberry Topping
- 1 cup blueberries
- 1 teaspoon sugar
- 1 teaspoon water
Instructions
- In a jar or bowl mix together the oats, milk, yogurt, maple syrup, cinnamon, and vanilla extract
- Stir to combine and let it sit in the refrigerator for a few hours or overnight
- In the meantime, in a small pan over medium high heat add the blueberries, water, and sugar
- Let them cook until the blueberries burst and a delicious jam form, about 5-7 minutes
- Turn off the blueberry mixture and let it come to room temperature
- To serve, add a good scoop of the blueberry mixture and some chopped walnuts to the top of the overnight oats and serve! A delicious and hearty breakfast that will be your new favorite
