Cranberry Orange Pound Cake
When the holidays are here, I can’t get enough cranberry and orange. I’ll have it in just about everything! I always love having an easy dessert recipe that is festive and delicious that I can easily make and bring with me to any gathering. This pound cake recipe is SOO delicious, festive, and easy to make- perfect for this time of year. Happy Holidays!
Ingredients
Pound Cake:
1 cup (2 sticks) unsalted butter
1 3/4 cup sugar
2 tablespoons orange zest
3 eggs
1 teaspoon vanilla extract
3/4 cup buttermilk
2 cups all purpose flour
2 teaspoons baking powder
1 teaspoon salt
2 1/2 cups fresh cranberries
Glaze:
1 1/2 cups powdered sugar
1 teaspoon orange zest
1 tablespoon fresh orange juice
1 tablespoon milk
1/2 teaspoon vanilla extract
Instructions
Preheat your oven to 350 degrees F
In a bowl with an electric mixer cream together the butter, sugar, and orange zest
Add in the eggs, vanilla extract, and buttermilk and mix until smooth
In another bowl whisk together the dry ingredients until combined
Add the dry ingredients to the bowl with the wet ingredients and mix until just combined
Stir in the fresh cranberries
Grease a bundt pan or 2 loaf pans with spray. Add in the batter and put into the preheated oven
Bake for 55-60 minutes or until a cake tester comes out clean
Turn out the cake and let it cool completely
Once the cake has cooled make the glaze! In a bowl add in the powdered sugar, orange zest, orange juice, milk, and vanilla extract. Mix until combined. You might need to add a little more liquid or powdered sugar to get the right consistency! You don’t want it too thin because it will all run off and you don’t want it too thick because it won’t drip properly
To the top grate a little more orange zest and that is it! A festive, amazing, delicious dessert for the Holidays. Merry Christmas!
