Cucumber “Quarantini”
It’s the weekend!! I think?? Anyone else going a little stir crazy these days? I long for normalcy and the day restaurants and bars will be back open and I can go and have a nice dinner and a delicious cocktail. Until that glorious day I’m trying to keep myself busy by cooking all the time and making fun cocktails. This cucumber “quarantine” is ABSOLUTELY delicious- AND, most of you will have all of the ingredients already! Why not treat yourself after a long hard day of doing not much of anything. Ingredients
3 inch piece of cucumber, peeled and diced
1/2 lime, sliced
5 basil leaves
1/2 ounce simple syrup (equal parts sugar water brought to a simmer and cooled)
3 oz vodka
Instructions
In a shaker muddle the cucumber until no large chunks remain
Squeeze in the lime and add to the shaker along with the basil. Muddle together
To the shaker add in the simple syrup, vodka, and ice
Put on the lid and shake vigorously until chilled
Strain into a martini glass, float a basil leaf on top, and sip away! Cheers (from afar!)
