PB&J Chia Seed Pudding
There are certain flavors that bring you back to your childhood. To me- that’s peanut butter and jelly. I used to (still do) LOVE a good classic peanut butter and jelly. Well, as good as they are they really aren’t the best for you. So- I decided to take that classic flavor and make something healthy but still delicious! Every bite will bring you back to the good old days.
Ingredients
Pudding:
2 tablespoons chia seed pudding
1 cup milk (any kind you want)
2 tablespoons peanut butter
2 teaspoons maple syrup
Strawberry compote:
1 cup fresh strawberries
1 tablespoon sugar
1 teaspoon water
Sliced Strawberries (optional)
Roasted Unsalted Peanuts (optional)
Instructions
In a bowl add the chia seeds, milk, peanut butter, and maple syrup. Stir to combine so no large chunks of peanut butter remain
Cover with plastic wrap and put into the fridge to sit for 4 hours or overnight
In a small saucepan over medium high heat add in the chopped strawberries, sugar, and water
Let the mixture come to a simmer and cook for 2-3 minutes
Take off the heat and let it cool completely before putting into the fridge to let chill
I personally like to layer the pudding and strawberry compote (mostly for visual affect) but you can always do the pudding on the bottom with the compote on top
I sprinkle the top with unsalted roasted peanuts and some sliced strawberries but this is optional as well! How easy is this healthy treat?
