3 3/4 cups self-rising flour
2 1/4 cups sugar
1 1/2 tsp baking soda
3 eggs
1 1/2 tsp cocoa
1 1/2 cups buttermilk
1 1/2 tsp vanilla extract
1 1/2 tsp vinegar
2 1/4 cup vegetable oil
1/3 CUP (yes, cup!) red food coloring
16 oz cream cheese
1 1/2 cup butter
2 lbs powdered sugar
1 cup chopped pecans (optional)
This is an AMAZING recipe!!! Trust me! Ok, so start by preheating the oven to 350*F. Sift all the dry ingredients together in a bowl to get any lumps out. Add the eggs, vinegar, oil, buttermilk, vanilla, and food coloring and mix very well. Careful though, the food coloring will stain that cute outfit! Spoon into lined cupcake pans and fill halfway. Bake for about 20-35 minutes or until a toothpick comes out clean from the middle. Cool in pan for 5-10 minutes and then remove from pan. Meanwhile, beat cream cheese and butter with mixer until light and fluffy. Slowly add the powdered sugar and mix until fully incorporated and smooth. Now the best part, put the frosting on the cupcakes and if you want, put chopped pecans on the top! Yayyy! So good <33
