Happy first day of Spring!! Celebrate this exciting time with my easy to make baked doughnuts. Every bite tastes like Spring and you won't be able to get enough.
Doughnuts
- 2 cups all purpose flour
- 1/2 cup sugar
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup cup buttermilk
- 2 large eggs
- 1/4 cup honey
- 2 tablespoons melted butter
- 1 tablespoon vanilla extract
- 1 cup diced strawberries
Glaze
- 1/2 cup strawberries, diced
- 2 tablespoons sugar
- 1 cup confectioners sugar
Instructions
- Preheat your oven to 425 degrees F
- In a small bowl get started with your glaze by adding the 1/2 cup diced strawberries and 2 tablespoons sugar. With a fork macerate the strawberries to allow all of the juices to come out. Set aside
- In a bowl mix together the flour, sugar, baking powder, and salt
- In another bowl mix together the buttermilk, eggs, honey, melted butter, and vanilla extract
- Add the wet ingredients to the dry and stir to combine
- Fold in the diced fresh strawberries
- Lightly grease your doughnut pans and fill 2/3 way full with the batter
- Put them into the oven to cook for 8 minutes or until a toothpick comes out clean
- Once they are cooked let them cool slightly while you make the glaze
- In a bowl add the confectioners sugar and the juice that the strawberries produced. Don't add in the actual strawberries! Start by adding 2 tablespoons and go from there. If it gets too runny, add in more sugar and if it is too thick, add in more juice
- Dip the doughnuts in the glaze, shake off the extra, and eat! Happy Spring!
