
Curried Chicken Satay with Peanut Sauce*

Ingredients
- 2 organic, boneless skinless chicken breasts, sliced into strips
- 1 cup plain greek yogurt
- 1 tablespoon mined fresh ginger
- 2 cloves garlic, minced
- 1 tablespoon curry
- salt
- pepper
- wooden skewers (make sure they've soaked in water for 30 minutes to prevent burning!)
- Peanut Sauce
- 3 tablespoons creamy peanut butter
- 1/3 cup coconut milk
- 2 teaspoons soy sauce
- 2 tablespoons brown sugar
- 1 teaspoon red curry paste
- juice from 1 lime
- lime wedges, fresh chopped cilantro, chopped peanuts for garnish
Instructions
- When my friends at Greensbury Market sent me some delicious organic boneless skinless chicken breasts I knew I had to make something special with them. I love anything with curry so to me this recipe is perfection. The peanut sauce is sweet, a little spicy, and out of control good. In a ziplock bag add the chicken strips, yogurt, garlic, ginger, curry, salt, and pepper. Squish it all around so all the strips are coated evenly. Let it marinate for 30 minutes or longer if you can. You can do this and leave them overnight if you want! The flavor only gets better the longer you marinate. Preheat the oven to 400 degrees F. Once the chicken is done marinating thread your skewer through the strips and place on a foil lined baking sheet. When you're done with all of them put them in the oven and set the timer for 7 minutes. While those are cooking on one side make the sauce. In a small saucepan over medium high heat add the peanut butter, coconut milk, soy sauce, brown sugar, red curry paste, and lime juice. You don't want to cook the sauce, only dissolve the sugar and make sure everything is completely mixed. Once completely combined take off the heat and put in a small serving bowl. After 7 minutes, take the chicken out and flip. Let them cook another 7 minutes on that side. Once the skewers are cooked take out, put on a plate, and serve with the peanut sauce. I like to put some lime wedges on the plate and sprinkle with some chopped cilantro and peanuts. I served these to my parents and they were gone within 5 minutes. Not joking. Absolutely delicious.
