
Fish en Papillote*

Ingredients
- 1 12x12 inch piece of parchment
- 1 teaspoon olive oil
- Fillet of any white fish you would like (halibut, tilapia, sea bass, etc)
- salt
- pepper
- 3 slices lemon
- 4-5 artichoke heart quarters
- 4 cherry tomatoes
- fresh thyme to garnish
Instructions
- Ever feel like making something really fancy really fast? Well, look no further! This recipe takes about 2 minutes to prepare and you won't believe how flavorful this healthy dinner can be. This recipe only makes one serving but it's so easy to do you'll want to make this for a dinner party of 20! I like to serve it rustic style still in the parchment with some rice and veggies. The first thing you want to do is preheat your oven to 350 degrees F. Lay your parchment paper flat and put your fish fillet in the middle. Drizzle it with olive oil and salt and pepper on each side. To the top of the fish add your slices of lemon, artichoke heart quarters, and cherry tomatoes. Take the two long side of the parchment and fold them together. Then take the outer pieces and fold them in, making a little package. Put it on a baking sheet and put in the oven to let cook for 15 minutes. How easy is that? Sprinkle it with some fresh thyme and pair it with a delicious 2009 Chateau Allégret Blanc and you have a perfect healthy meal in my opinion. Bon appétit!

The fish looks great……..but I have to mention that view at the end……now that view is AMAZING! :)
