
Lemon Rosemary Roast Chicken*

Ingredients
- 4 chicken thigh quarters
- 2 sprigs rosemary, leaves off the stem, chopped
- 4 cloves garlic, minced
- zest of 2 lemons
- juice of 1 lemon
- 1/4 teaspoon red pepper flakes
- salt
- pepper
- 1 cup extra virgin olive oil
- Lemon slices and sprigs of rosemary (for garnish)
Instructions
- Who doesn't love a good, simple roasted chicken dish? This one is about as easy as they get and it is so flavorful from all the fresh lemon and rosemary. Not to mention this is a healthy dinner! First thing you want to do is preheat your oven to 425 degrees F. Put your chicken thighs into a baking dish and season them with some salt and pepper. In a bowl mix together your chopped up rosemary, garlic, lemon zest, lemon juice, salt, pepper, and red pepper flakes. Add your olive oil and mix to combine. Pour the marinade over the chicken. I like to turn my chicken around in the marinade a few times to completely coat it. If you want, you could marinate the chicken for a few hours to really get a kick of flavor! Before I put my chicken in the oven I like to add a few thin slices of lemon and rosemary to the top... just to make it pretty of course. Put in the oven and let cook until the top is a beautiful golden brown, about 45 minutes. I was using pretty big pieces of chicken, so make sure you cut the time down if you aren't using as big of a piece as me. Before serving I like to spoon those delicious juices over the top... just to make it even more flavorful. How easy is that?? Dinner is served!

I love the idea of marinating the chicken then doing them on the grill. I’m not always in the mood to fire up the oven this time of year. Do you think this would work for a whole chicken using the rotisserie on a grill?
