Peanut Butter & Jelly Blondies*

  • 1 1/4 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 large eggs
  • 1 1/2 cups light brown sugar
  • 1 1/2 cups smooth peanut butter
  • 1 teaspoon vanilla extract
  • 3 tablespoons raspberry jam
  • 1 tablespoon chopped honey-roasted peanuts


  1. This recipe will definitely bring out your inner kid. Who doesn’t love a good PB&J?! I know I do and this recipe is so delicious and easy that anyone can do it. Who said PB&J was only for kids? If you don’t like raspberry jam you can use whatever flavor jam that you’d like. Ok, first thing you want to do is preheat your oven to 350 degrees F and lightly grease an 11×8 inch pan. Or, if you want thicker blondes you can use an 8×8 inch pan. Just let it cook an extra 3-5 minutes. In a bowl mix together the flour, baking power, and salt to combine. In another bowl with an electric mixer mix together the melted butter, large eggs, light brown sugar, peanut butter, and vanilla extract. Mix it all together until smooth. Add the dry ingredients to the wet ingredients and mix until combined. Add the batter to the pan. To the top of the smoothed down batter add dollops of the jam all over. With a knife, swirl it all around, sprinkle the top with the chopped honey-roasted peanuts, and put the pan into the preheated oven and let it cook for about 30 minutes, or until a cake tester comes out clean. Let your beautiful blondies cool slightly before you cut them. Be prepared to revert back to kindergarden in the most delicious way possible. Enjoy!
