
Watermelon & Feta Salad*

Ingredients
- 4 cups fresh Arugula
- 2 cups fresh seedless watermelon, cut in cubes
- quarter of a red onion, sliced thin
- 2 tablespoons fresh mint, chopped
- 1/4 cup fresh Feta cheese, crumbled
- 1/3 cup balsamic vinegar
- 1/3 cup extra virgin olive oil
- salt
- pepper
Instructions
- Ok, if you're like me I go to the grocery store and see these big beautiful watermelons on sale and I'll buy one thinking I'll eat the whole thing. I'll get home and have a few slices and be over it. Then I'm left with half of a perfectly delicious watermelon in my fridge just sitting there! Well my friends, this is what you can do with that delicious leftover watermelon. I love watermelon and feta together. You have the saltiness from the feta mixed with the cool sweetness of the watermelon. Perfection. Then, when you add the spiciness of the arugula and the freshness of the mint you have a killer salad. First thing you want to do is assemble your salad. Add the arugula, watermelon, sliced red onion, mint, and feta to your salad bowl. In another bowl add the balsamic, salt, and pepper and whisk in your olive oil. When you're ready to eat pour the dressing over the salad, toss, and serve! So easy and very delicious. A must make!

Looks great! I have a question — I was watching a cooking show from Ireland not long ago, and the chef prepared a salad with a leefy green called rocket that looked like arugula. Is it the same thing?
