Lemon, Butter & Caper Zucchini Noodles
This healthy dinner is SO flavorful you won't even believe you're eating zucchini instead of pasta. It has a tangy bite from the lemon and capers with a buttery, garlicky, flavorful sauce that will keep you totally satisfied. Who says healthy has to be boring?

  1. 3 large zucchinis, made into noodles using a spiralizer
  2. 2 tablespoons butter
  3. 1 tablespoon olive oil
  4. 3 small shallots, diced
  5. 3 cloves garlic, minced
  6. salt
  7. pepper
  8. 1/4 teaspoon red pepper flakes
  9. 1/2 cup sun dried tomatoes, chopped
  10. Zest of a whole lemon
  11. Juice of a whole lemon
  12. 1/4 cup capers, drained
  1. Chopped fresh parley
  2. Pine nuts
  3. Grated Parmesan
  1. In a large saute pan melt the butter and olive oil
  2. Add the shallots, garlic, salt, pepper, and red pepper flakes and saute for about 2-3 minutes
  3. Add the zucchini noodles to the pan, stirring to combine, and let it cook for 5 minutes
  4. To the noodles add the chopped sun dried tomatoes, lemon zest, lemon juice, and capers. Stir to combine and cook another 2-3 minutes
  5. Now it's time to serve! I like to top the zucchini pasta with a lot of chopped fresh parley, pine nuts, and grated Parmesan for extra flavor and crunch
  6. That's it! A delicious and healthy meal that is made in minutes. You can also top it with chicken for additional flavor and protein. Enjoy!
