
Blueberry Gin Fizz*

Ingredients
- 1/2 lime, cut in wedges
- 5 fresh mint leaves
- 1 teaspoon sugar
- 1/8 cup blueberries
- 2 ounces gin
- club soda
- fresh mint to garnish
Instructions
- One of the things we do in our family that kicks off Summer is blueberry picking at my uncle's farm. We get up early and drive to the farm and pick as many gorgeous blueberries as we possibly can while chasing the peacocks that roam freely. We always have so much fun and then for the next few months I have bags of fresh blueberries. Last year while picking I ate so many that I got sick so I tried to restrain myself a little this year. After a long day of picking we always make ourselves special treats. We make blueberry pies, blueberry pancakes, blueberry mojitos, and this year... a blueberry gin fizz. Yum!! In a shaker add the lime wedges, fresh mint leaves, sugar, and blueberries. Muddle them together and then add the gin (or vodka). Give it another muddle and pour everything in a glass filled with ice. Top it off with club soda and garnish with a mint sprig and lime wedge. So light and refreshing. Happy Summer everyone! Cheers!
