
Coconut Rice Pudding with Mango*

Ingredients
- 2 cups whole milk
- 1 can coconut milk
- 1/2 cup short grain (aborio or risotto) rice , uncooked
- 1/2 cup sugar
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1 fresh mango, cut into pieces
Instructions
- Coconut and mango = match made in heaven. I love it so much. One of my favorite desserts is rice pudding and this is a really fun and flavorful spin on the traditional recipe. Instead of using all milk and cream you substitute some for coconut milk. The end result is absolutely delicious. It's creamy, decadent, and has that essence of coconut that is not too overwhelming. Then when you top it off with the fresh mango it's an explosion of flavor! This recipe makes a small batch, perfect for about 2-3 people so you might want to double or even triple the recipe. My dad told me he could have had the entire thing for himself for dessert... and I believe it! This recipe is very easy but it does involve some stirring. That's ok though, you'll get a good workout in before eating it! It pretty much cancels out all the calories you're about to consume. Right? Right! Ok, in a heavy bottomed pot over high heat add the whole milk, coconut milk, rice, sugar, vanilla, and cinnamon. Let it come up to a boil, stirring often. You don't want the milk to scorch over the high heat and it's very easy to do so watch it carefully. Once it comes up to a boil, turn it down to low and let it slowly simmer, stirring often, for about an hour until it is thick and creamy. After about an hour, you have a few options: eat it hot, warm, or put it into the refrigerator and let cool for a few hours. That is my favorite way but the choice is yours! Serve with fresh cold mango on top and you have yourself a delicious Summer treat!

That pudding just reminded me of “arroz con leche” (Milk rice pudding), very typical in latin countries which I used to eat a lot: arroz con leche with raisins and cinnamon…
