  • Author: Cooking For Bimbos

  • 1/2 cup blueberries
  • 1/4 cup water
  • 1 teaspoon maple syrup
  • 1/2 cup strawberries, diced
  • 1/4 cup water
  • 1 teaspoon maple syrup
  • 1 cup plain Greek yogurt
  • 1/2 cup almond milk (or regular milk)
  • 2 teaspoons vanilla extract
  • 1/2 cup Granola
  • 1/4 cup yogurt
  • Popsicle mold & sticks

  1. I LOVE this recipe. It’s so tasty and not to mention beautiful. You’ll feel like you’re eating something naughty but actually it’s healthy!
  2. Heat two different small saucepans up over medium high heat
  3. In one pan add the blueberries, water, and maple syrup. In the other add the strawberries, water, and maple syrup
  4. Bring them to a simmer and let them cook for about 10 minutes, stirring often, until they start to get thick. Turn them off and set aside
  5. In a bowl mix together the Greek yogurt, almond milk, and vanilla until smooth
  6. Now it’s time to assemble! In your Popsicle mold do a small layer of the Greek yogurt, a spoonful of the strawberry mixture, another yogurt layer, then a scoop of the blueberry mixture. Make sure you leave room at the top for the granola
  7. Do this in all the molds until you run out of everything. Then, in the same bowl that you mixed the yogurt in add the granola with some more of the yogurt and stir to combine. Top them with the granola mixture and add the Popsicle sticks
  8. Let them freeze a few hours until solid, about 3
  9. That’s it! A healthy breakfast treat everyone will love
