
Pyure Blueberry Crumble Bars*

Dough
- 1 cup Pyure Stevia Sweetener
- 1 teaspoon baking power
- 4 cups all purpose flour
- 1/4 teaspoon salt
- 2 sticks butter, cut in pieces
- 1 egg
Blueberry Filling
- 4 cups (1 quart) fresh bluberries
- juice of 1 lemon
- 1/2 cup Pyure Stevia Sweetener
- 4 tablespoons cornstarch
Instructions
- I made this recipe to honor National Diabetes Month. My friends at Pyure Brands asked me to come up with a recipe that would be perfect to use with the Stevia Sweetener and this is what I came up with! It's so easy to make, sugar free, and delicious! The first thing you want to do is preheat your oven to 350 degrees. In one bowl mix together the Pyure Brand Stevia Sweetener, baking powder, salt, and flour. To the dry ingredients add the butter and egg. Mix together with your hands or with a pastry cutter until everything in mixed together. The dough will be very crumbly. Set aside. In another bowl mix together your fresh blueberries, lemon juice, Pyure Brand Stevia Sweetener, and cornstarch. Grease a 9x13 inch pan. Add half of the dough to the pan and pat down evenly for the crust. Add the blueberry mixture on top of the crust and top off with the rest of the dough. Put into the oven and let cook for 45 minutes, or until the top is slightly brown. Take out of the oven and let cool. Slice into squares and serve. Enjoy!

i think that’s considered “no sugar added” as opposed to “sugar free” due to the blueberries. but i vote for more stevia recipes!
