
Strawberry Streusel Muffins*

Ingredients
- Strawberry Muffins:
- 3 cups all purpose flour
- 1 1/2 cups sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 tablespoons cinnamon
- 1 1/4 cup milk
- 2 eggs
- 2 sticks unsalted butter, melted
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, diced
- Streusel Topping:
- 1/2 stick unsalted butter
- 1 teaspoon cinnamon
- 1/4 cup brown sugar
- 1/2 cup all purpose flour
Instructions
- In the beginning of summer the strawberries are bountiful and delicious in Florida. One of my favorite memories as a kid was going to pick strawberries with my family then coming home and making delicious pies and other treats. This is another great recipe that you can use with those strawberries that are a getting a little too overripe to eat fresh, but you don't want to throw them away! They're super easy and have a light and fluffy consistency. The streusel on top just adds a little extra something special! First thing you want to do is preheat your oven to 375*F. In a bowl combine all the dry ingredients: flour, sugar, baking powder, baking soda, cinnamon, and salt. Mix to combine. In another bowl mix together the wet ingredients: milk, melted butter, eggs, and vanilla extract. Add your wet ingredients to the dry ingredients and stir until everything is combined. Don't over mix the batter! We want nice fluffy muffins. To the batter add the chopped strawberries and fold in. Lightly grease your muffin tins with cooking spray and scoop the batter in. Fill about 2/3 of the way up. In another bowl make the streusel. With your fingers or a fork mix together the butter, brown sugar, cinnamon and flour. Sprinkle the topping on the muffins and put in the oven. Let them bake about 20-25 minutes, or until you stick a tester in the middle and it comes out clean. Let cool for about a minute or so before eating them. Delicious homemade muffins! What's better than that?!
