
Classic Carrot Cake

This classic carrot cake is so simple and easy to make.. full of flavor and love! The perfect Easter dessert. I personally like my carrot cake the classic way, without any pineapple, coconut, or any other fillers that take away from the deliciousness. Sometimes, you don't need a bunch of fancy ingredients for an insanely good cake.
Carrot Cake
- 2 1/2 cups all purpose flour
- 1 1/4 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/8 teaspoon ground clove
- 1 pound peeled carrots (about 3 packed cups)
- 1 1/2 cups granulated sugar
- 1/2 cup light brown sugar
- 4 large eggs
- 1 1/2 cups canola oil
Cream Cheese Frosting
- 10 tablespoons unsalted butter, room temperature
- 3 cups confectioners' sugar
- 1 1/2 teaspoons vanilla extract
- 1/4 teaspoon salt
- 2 tablespoons sour cream
- 1 pound COLD cream cheese ( cut in cubes )
Instructions
- Preheat your oven to 350 degrees F and grease three 9 inch cake pans
- In a large bowl, mix together the dry ingredients: the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and clove
- In another bowl mix together the eggs, granulated sugar, brown sugar, and oil until combined
- add the flour mixture to the wet ingredients and mix until combined
- Add the shredded carrots and stir together with a spatula until combined
- Pour the batter into the greased pans evenly and put them into the oven. Let them cook until a cake tester comes out clean, about 20-25 minutes
- Let the cakes cool completely on a wire rack, about 1 hour
- In a bowl with an electric mixer mix together the butter and confectioner's sugar
- Add the sour cream and vanilla and mix until smooth
- Add the cold cream cheese and mix until smooth
- Put a layer of cake on your cake plan and spread about 1 cup of frosting evenly before adding another layer
- Place the second layer and press down so it sticks together. Add another cup of frosting and spread it evenly
- Put on the last layer and spread the rest of the frosting all over the top and the sides evenly
- I like to put a few fresh roses on top but you can use whatever kind of garnish you want!
