
CORNBREAD WITH CHEDDAR CHEESE, SCALLIONS, AND JALAPENO*

Ingredients
- 1 cup cornmeal
- 1 cup all purpose flour
- 3 tablespoons sugar
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/4 cup oil
- 2 eggs
- 2 scallions, sliced
- 2 jalapenos, seeds in or out, finely diced
- 1/2 cup shredded sharp cheddar cheese

- Let me tell you about cornbead ya’ll. It’s delicious. Growing up we always had cornbread. It’s a southern staple! My grandma Boppy is from Tennessee so we know good corn bread! My mom always liked to be inventive with it. You can do all kinds of delicious variations with it. It can go from sweet to savory to spicy. Up to you! This recipe minus the cheddar, scallions, and jalapeno is a great go-to basic cornbread recipe. Be creative! The first thing you want to do is preheat your oven to 375 degrees F and grease a 9″ pie pan. In one bowl mix together the dry ingredients: cornmeal, flour, sugar, baking powder, baking soda, and salt. In another mix together the wet ingredients: buttermilk, oil, and eggs. Add the wet ingredients to the dry and mix together just to incorporate. Add the chopped scallions, jalapenos, and cheddar cheese to the mixture and stir to combine. Pour the mixture into your greased pan and bake for about 30-35 minutes or until a toothpick inserted into the middle come out clean. Prepare for a hoedown in your mouth ya’ll.

Mmm looks so good ! I like to make jalapeño cornbread but I have never added scallions to it. So I’m glint to try it! I like to make cornbread with bacon and cheese and jalapeños too, so I’m going to try adding scallions to that one too. Please do more videos. I like to watch your videos, but there ain’t that many! Your home is beautiful .
